PERLA is a luxury seafood restaurant serving refined contemporary American cuisine with gracious professional hospitality.
Located in the dramatic shell surrounded by a reflecting pool. Designed by Jorge Rosselló, the interior is elegantly appointed with luxurious furnishings and exotic materials. Eight hand blown Murano glass lamps illuminate the shell shaped ceiling.
Perla offers an impressive 30 wines by the glass culled from a climate controlled cellar of 4,000 bottles sporting 1,000 different labels.
Chef Lindell Smith
Lindell Smith is the chef at Perla Restaurant located in the Condado area of San Juan. Lindell grew up surrounded by the restaurant and hospitality industry. His father, Dayn Smith, a recognized and influential chef in Puerto Rico had always shared with him the love of the kitchen. They now work together creating a memorable dining experience to their guests at Perla Restaurant.
Lindell has developed his career in the restaurant industry by dedicating himself to learning all facets of service. He spent his first three years studying at NYU working at Palma Restaurant in the West Village in New York City. There, Lindell worked as the host and server to intimate private dinner parties held by celebrities and high end fashion designers. After his three year experience as a server to the elite in NYC, Lindell enrolled at the Culinary Institute of America. Before Lindell’s graduation from the CIA he was able to get an opportunity to “stage” (a week long cooking interview) at Jose Andres’ Mediterranean restaurant in Washington D.C., Zaytinya. Lindell was hired, by Washington D.C. celebrity chef, Mike Isabella. After his experience at Zaytinya, Lindell moved to Puerto Rico and is now heading his family business.
